Spring detox soup 👏

Spring is finally here. Hopefully they all should “influenza epidemic” … winter stresses and bad moods are long gone. Just to be sure, that nothing like that will happen to us, it's good to take care of yourself. How about the soul, as well as the body. Today we have a great recipe for spring detox soup for you.

I know of no better immune support, than there are soups đŸ€—

On ours SPRING DETOX SOUP YOU WILL NEED :

  • 1 Tablespoons olive oil
  • 800 ml vegetable broth
  • 100 ml coconut milk / OR any other milk to taste
  • 1 onions
  • 2 stalks of celery
  • 2 cloves of garlic
  • 2 carrots
  • 500 (g) potatoes
  • 150 g arugula plus a little for decoration
  • 1 spoon of ground ginger
  • 2 Tablespoons lemon juice
  • Salt
  • pepper
  • 2 spring onions
  1. Peel and chop the onion and garlic. Cut the celery into smaller pieces, cut the carrots into rounds. Peel the potatoes and cut them into cubes. Cut the spring onion into thin strips.
  2. Heat the olive oil in a large pot and fry the onion and celery for three minutes. Add the garlic, carrots and potatoes and fry for another two minutes. Pour in the broth and let it cook 20 minutes, until the vegetables are soft.
  3. Then add the arugula and cook for another three minutes. Blend the soup with a stick blender and add coconut milk, ginger and lemon juice.
  4. Season with salt and pepper, divide into bowls and garnish with spring onions, rocket leaves and a little freshly ground pepper.
